My Chicken & Pasta Thing (an invention)
4-6 skinless, boneless chicken cutlets
olive oil or extra virgin olive oil
3 Lg onions sliced in 1 1/2" wedges
1 Lb mushrooms cut into chucks
6 dried tomatoes cut into thin strips
2/3 cup white wine
garlic, oregano, salt & vinegar mixture to season over cutlets & set aside
(the pelon mixture)
1 Lb penne pasta boiled to al dente
5 tbs fresh basil
1 tbs fresh parsley
1 tbs oregano
1 tsb thyme
1 tsb garlic power
1 tsb marjoram
1 tbs fresh ground black pepper
black olives chopped ( optional )
grated parmesan or cheese of choice
Brown cutlets in olive oil. Add wine scrape pan. Return chicken to pan, until
chicken is thoroughly done. Remove from pan & put in corning ware w/lid. Add oil
to pan & toss onions, mushrooms & sun dried tomatoes (black olives optional )
when done, add to chicken corning ware. In same pan melt 5 tbs of butter & add 1
tbs of each of the dried seasonings. Pour over pasta, toss add olive oil if
necessary & parmesan or cheese of your choice.
